Schalotten pellen. Knoblauch hacken. Butter und &Ouml;l erhitzen. Die Schalotten darin bei mittlerer Hitze unter Wenden ca. 5 Minuten and&uuml;nsten. Knoblauch und Reis zugeben und glasig d&uuml;nsten. Rotwein angie&szlig;en und einkochen lassen.<\/p>\n<p>2. Nacheinander je 1\/3 vom hei&szlig;en Fond zugie&szlig;en und immer wieder einkochen lassen. Den Reis insgesamt bei mittlerer Hitze offen 25-30 Minuten ausquellen lassen. Mit Salz und Pfeffer w&uuml;rzen<\/p>\n<p>3. Zuletzt abgezupfte Thymianbl&auml;tter unterheben. Den Risotto auf vorgew&auml;rmten Tellern anrichten.
